Oils and Fats in the Nineties helps producers, processors and users to prepare for the changes expected in the 1990s and beyond. It looks forward to future needs for oils and fats, unlike other books which so often take a retrospective view. Specific properties and applications for food and non-food uses are described. For the user it describes the new oils and fats and the new fractions and derivatives that will, or could be made, available. This information gives the opportunity to plan ahead for new and exciting products in the 1990s.

For the producer and processor it reviews the major approaches to satisfying future requirements: development of oils and fats from new sources, modification of present oils and fats, and substitution of one fat for another. Oils and Fats in the Nineties contains 315 pages representing the papers presented at the conference of this name held in Fredericia, Denmark, 23-26 March 1992.


Antioxidants in Foods and the Treatment of Human Diseases (limited numbers available)

This conference was held in Denmark from October 28-31, 1991. These proceedings cover various lectures given on different aspects of antioxidants and their importance to protect foods and for protection against several diseased conditions. This conference concluded with recommendations for further study of chelating agents, the need for common nomenclature, further study of mediating effect of lipids on radicals, and for improved analytical techniques to study and monitor lipid oxidation.


Applications of Pulsed NMR Techniques for Food Analyses (limited numbers available)

This conference was held in Denmark from September 9-12, 1991. The conference was concerned with the applications of Pulsed NMR to food analysis and with explanations of the technique.
